Aiste Miseviciute has quite the resume. She left her native Lithuania when she was just 18 years old to pursue modeling, and went on to work with such international powerhouses as Vogue and Givenchy. Aiste later moved on to study finance in Paris.  However, she has made an interesting transition into a new career (or should I say careers?). She is currently a food blogger, restaurant critic, and documentary film maker. She divides her time living between London, Paris and Ibiza. Although it doesn’t seem like Aiste has much free time, she graciously took a few minutes to answer some of my questions.

How did you make the crossover from model into food blogger?

“I started my blog over ten years ago when I was still modelling in New York. Blogs were just becoming popular and I thought it was a fun hobby. I guess I was one of the first food bloggers! At that time my blog tagline was ‘Who said that models don’t eat?’ I started taking the world of food and gastronomy more and more seriously, and I learned a lot. I realized that behind every ingredient or restaurant there is a lifetime dedication and human story, which I try to tell via Luxeat.com. Today, the line between blogs and mainstream food journalism has almost disappeared and bloggers have the same responsibility as journalists to be honest, relevant, and interesting to their readers.”

“My advice to restaurateurs would be to keep it seasonal, local, and simple!”

 

What is the best dish you’ve ever eaten?

“There are so many! At the close of every year, I compile a list of my ‘best dishes of the year.” This year’s can be seen here: http://www.luxeat.com/blog/20-dishes-2016/. It can be anything between a really perfect croissant, a bite of sushi, or an elaborated dish by a Michelin 3-starred chef.”
The worst?
“I know many people in Japan love kakigori, but it’s something I totally didn’t get. It’s just a lot of shaved ice with overly sweet sauce.”
Any foods that you just don’t like no matter how good someone claims they are?
“There is not really a logical reason why, but I don’t eat birds!”
  What dining experience has had the most impact on you and why?
 
“Probably when I was 18 and had dinner at Apicius, a Michelin 2-starred restaurant in Paris. That one dinner completely changed the way I understood food. The other huge influence on me has been my travels to Japan; nowhere in the world  have I had such mind blowing food. The techniques and ingredients used by the Japanese chefs are on another level.”

“Presence on social media is crucial for today’s dining industry. One post on Instagram can have the same or bigger advertising power than being mentioned in a restaurants guide or a newspaper article. The world of gastronomy has become much more democratic. Many fine dining chefs have Instagram accounts, update them regularly, and interact with their followers.”

 

 

Any goals for the upcoming year?

“I hope to continue my documentary series about exceptional ingredients. We filmed the pilot episode last August in Denia, which  is about ‘gamba roja,’ a red prawn living deep in the sea and considered a delicacy.”

Any long term goals?

“Artisan-ship is what I am most passionate about. I’d love to continue what I am doing and highlight the hard work of chefs, artisan and producers.”
If you couldn’t blog about fashion, modeling, travel, or food, what would you blog about?

“I am not sure I would blog about it, but I am passionate about archaeology and ancient Roman history.”

"For me food is all about memories and replicating those memories. I still haven't tasted the same strawberries that used to grow in my grandmother's garden. I keep looking, but I think I will never be able to replicate that exceptional flavor from my childhood."
